Operating Principle

  • Yeast Propagation Process

First, perform in-situ cleaning (CIP) and steam sterilization on the equipment to ensure a sterile environment throughout the system. Subsequently, inject hot or cold wort into the yeast propagation tank. Sterilize the wort using the conical heating jacket, then cool it to the process temperature suitable for yeast growth using the cylindrical cooling jacket. Before inoculation, aerate the wort with sterile air via an aeration spray gun equipped with an air dissolver to meet the dissolved oxygen requirements for the initial stage of yeast growth. (Large tanks are equipped with hollow shaft agitators, which replace traditional aeration structures to achieve gentle and homogeneous material mixing and further ensure yeast viability.)

Throughout the process, under sterile and closed conditions, pure yeast strains are introduced from culture flasks to initiate propagation. During propagation, the system precisely maintains the set process temperature and performs sterile oxygenation as needed, based on the characteristics of the yeast strain, to ensure the conditions required for yeast growth in real-time. Once the yeast cell concentration reaches the preset process standard, the propagated yeast is directly transferred to the intermediate fermentation tank or added directly to the brewing fermentation tank for the beer fermentation process.

  • Cleaning Procedure

Before and after equipment operation and material transfer, all pipelines are flushed with clean water and sterilized with high-temperature steam to thoroughly remove residual materials in the pipelines and prevent microbial contamination. The entire yeast propagation system can be flexibly connected to a CIP cleaning station, enabling full-process automated cleaning operations. This significantly reduces maintenance costs and labor intensity, ensuring the equipment maintains a long-term sterile working condition.
