Production Line Introduction

This concentrated mango juice processing production line is specifically designed for industrial-scale production of concentrated mango juice, offering flexible solutions ranging from 100 KL to 50,000 KL per year, precisely matching the production needs of enterprises of different sizes. Using fresh mangoes as raw material, the line processes washing, peeling and pitting, pulping, concentration, sterilization, and bottling to produce high-quality concentrated mango juice that can be stored for a long time and is easy to transport and blend. The production line integrates core equipment such as plate elevators, brush washing machines, surf washing machines, pitting and pulping machines, colloid mills, vacuum degassing machines, evaporation and concentration equipment, and aseptic filling machines, ensuring the superior microbial safety and flavor stability of the concentrated juice.

Process Description

Raw Material Receiving and Sorting:

Raw Material Receiving: After fresh mangoes arrive at the factory, they are inspected for rot and pests.

– Sorting: Fruits are graded by ripeness, size, and quality using a sorting machine, and substandard fruits are removed.

Washing:

– Pre-washing: Mangoes are fed into a wave-surfing washing machine via a plate elevator, where circulating water removes surface dirt and sand.

– Deep washing: Mangoes enter a brush washing machine, where they are scrubbed by rolling brushes and high-pressure spray.

Peeling, pitting, and pulping:

– Peeling: The outer skin is removed using a mechanical or steam peeler.

– Pitting and pulping: A pitting and pulping machine separates the pulp from the pit, simultaneously completing the initial pulping process.

Refining:

Colloid milling: The pulp is finely ground in a colloid mill to improve its smoothness.

Temporary storage: The refined mango juice is transferred to a temporary storage tank for buffering before entering the deaeration process.

Deaeration: The mango juice is pumped into a vacuum deaerator to remove oxygen and air under vacuum conditions, preventing oxidation.

Concentration: After degassing, the juice enters the evaporation and concentration system, where some water is evaporated under vacuum and low temperature conditions, concentrating the soluble solids content from approximately 12–15°Brix to 60–72°Brix; evaporation temperature 50–60℃, vacuum degree -0.07 to -0.09 MPa; mango pulp has high viscosity, requiring an evaporator suitable for high-viscosity materials.

Sterilization: The concentrated mango juice can be sterilized using ultra-high temperature sterilization (UHT): heated to 120–135℃ and held for 2–5 seconds to inactivate microorganisms and enzymes.

Bottling and Cooling:

– Filling: Filled into pre-sterilized containers under aseptic conditions and sealed immediately.

– Cooling: Rapidly cooled to room temperature or approximately 38℃ after filling.

Basic Equipment Components

Fruit Sorting Machine: Grades mangoes according to ripeness, size, and quality, removing substandard fruit.

Plate Elevator: Automatically lifts mangoes to each process stage, facilitating continuous production.

Surfing Washer:Uses circulating surfing water to pre-wash mangoes, removing surface dirt and impurities.

Brush Washer:Deeply cleans mangoes using rolling brushes and high-pressure spray.

Peeler:Removes the mango peel mechanically or with steam.

Pit and Pulping Machine:Separates the mango flesh from the pit, simultaneously blending it into a smooth pulp.

Colloid Mill:Finely grinds the pulp, creating micro-particles and improving smoothness.

Storage Tank:Temporarily stores the refined mango juice, buffering it before the deaeration process.

Vacuum Deaerator:Removes oxygen and air from the juice under vacuum conditions, preventing oxidation.

Falling Film Evaporator:Evaporates some water under low-temperature vacuum, concentrating the mango juice to the target concentration.

Scraped Evaporator:Forces film formation and prevents scorching; suitable for concentrating high-viscosity mango juice.

Co-type Sterilizer:Performs high-temperature instantaneous sterilization on the concentrated mango juice, reducing the risk of scorching and clogging.

Aseptic filling machine: Fills concentrated mango juice into aseptic bags or containers and seals them in an aseptic environment.

Cooling device: Quickly cools the product to room temperature or storage temperature after filling.
