This article column is specially to discuss what are the operation points of the first wort filtration. Wort filtration process can be roughly divided into two stages. The first stage is to separate wort from mash by using wort as filter layer, and this part of wort is called first wort or first wort; the second stage is to wash the soluble extract from wort with hot water, and the obtained wort is called second wort or second wort. First, the operation points of wort filtration are as follows.
What are the operation points of the first wort filtration?
① Push hot water into the bottom of the filter tank to make the water between the filter plate and the tank bottom full of hot water (the water temperature is 76 ~ 78 ℃), and there is no filter plate on the water surface just to eliminate the air in the bottom space.
② Pump the mash into the filter tank, and start the tiller properly to mix evenly.
③ Standing for 15 ~ 20min, the wheat grains settle on the filter plate to form a filter layer.
④ At the beginning of filtration, open and close the wort valve or the central filter tube alternately, discharge the turbid wort and pump it back to the filter tank for re filtration until the wort is clear. The circulation reflux time takes 5 ~ 10min.
⑤ Open the filter cock in turn, control the wort outflow speed, and formally start the filtration.
⑥ After filtration for a period of time (about half of the total filtration time of the first wort), the filter layer was compacted, the resistance increased, and the outflow velocity decreased significantly. At this time, the filter cock should be closed and the tiller should be started to loosen the filter layer slowly.
⑦ Start filtering again and pump the turbid wort back to the filter tank until the wort is clear. The first wort was filtered out.
