What are the requirements for malt storage?
After calcining at high temperature, the enzyme in malt is not active, but through storage, the enzyme in malt can be recovered and further decomposed, which is conducive to the improvement of leaching rate. The malt after root removal should be stored for a period of time to achieve the above purpose. The specific requirements for malt storage are as follows.
(1) The time requirement should not be less than one month, but not more than six months. The less the effect, the more the leaching rate and malt flavor.
(2) Storage conditions require bagged storage, the warehouse should be ventilated and dry, and moisture-proof measures should be taken. The moisture content in the warehouse should not exceed 5% and the temperature should not exceed 25 ℃ for the storage in the closed vertical warehouse, and the treatment of insect prevention, rat prevention and moisture-proof should be done well.
(3) The management requires records on the date, variety, quantity and quality of warehouse sealing, as well as records on humidity, temperature, laboratory test and spot check, and solutions.
