What is grinding degree? What are the requirements for grinding degree of malt and excipients?
Comminution degree is the degree of material comminution. Specifically, it is the relative proportion of coarse powder and fine powder after malt or auxiliary material comminution. For malt, it also includes the proportion of wheat husk or the degree of broken wheat husk. The comminution degree can be distinguished by "good, poor" or "coarse, fine". According to the requirements of beer brewing, the grinding degree is not the finer the better, but the appropriate thickness, which depends on the quality of malt and the specific requirements of saccharification process.
Malt can be crushed into five parts: husk, coarse grain, fine grain, coarse powder and fine powder. Generally, the husk must be broken but not broken. The finer the endosperm of malt, the better. The ratio of coarse grain to fine grain (including fine powder) should be more than 1:2.5. For the filter tank, the proportion of wheat husk plus residual attached powder in the husk should be 35% ~ 40%, not less than 30%; for the well dissolved malt coarse powder, it should be 40% ~ 45%, and the fine powder should be 15% ~ 20%; for the poorly dissolved malt coarse powder, it should be 25% ~ 30%, and the fine powder should be 25% ~ 30%. For the factories using wort filter, generally 20% ~ 25% of wheat husk, 35% ~ 40% of coarse flour and 30% ~ 35% of fine flour are mastered.
In order to improve the saccharification leaching rate, the grinding of excipients is generally fine, but it should not be too fine, because too fine powder, especially in the case of poor saccharification effect and incomplete saccharification, is easy to form sludge and block the wort filter diameter, or enter wort through the filter layer, so that there are more suspended particles in wort and cause beer starch turbidity. If the enzyme activity of malt is high, the grinding degree of excipients should be controlled above 70% through 40 mesh sieve.
