How to improve the solubility of malt mainly from the following aspects
(1) We should carefully control the quality of raw materials. The germination ability of barley reflects the initial germination ability of barley. We should choose raw materials with high germination ability, try to use raw materials with low water sensitivity, and do not use old barley or dormant barley. Barley with low protein content should be used instead of barley with high protein content and uneven grain size.
(2) It is necessary to strictly control the technological conditions, and the grading and cleaning equipment of raw materials should meet the good performance of technological requirements, so that the uniformity of barley after cleaning can reach more than 90%.
The wheat soaking equipment should be able to provide good conditions for wheat soaking, with the functions of water temperature regulation, ventilation intensity regulation, CO2 removal, spraying and mixing, so as to obtain sufficient moisture, oxygen and dew point rate of no less than 70% for barley and ensure the best wheat soaking degree. Different production process, different germination cycle, different ventilation and mixing operation rules are formulated for different raw materials of different origin, different varieties and different quality.In order to reduce the loss of malt enzymes and improve the solubility of malt, two key processes, wilting and dehydration, should be strictly controlled in the drying stage of malt.
(3) In order to control the performance of production equipment, strict process conditions are provided by good production equipment, and the appropriate temperature, moisture, air and its regulation in the wheat making process should be equipped with corresponding facilities. In order to meet the requirements of process conditions and operating procedures, sufficient capacity of soaking tank, area of germinating bed, area of drying bed, area of ventilation, CO2 removal and mixing facilities, and air conditioning devices should be provided.
(4) Due to the difference between raw material batches, the difference between production process and actual operation, the failure and abnormality of production equipment, and the objective factors of external climate change, the solubility of malt will change unexpectedly. Therefore, it is emphasized to strengthen the detection and inspection in the production process, constantly find problems and adjust them, It is feasible to control the solubility of malt.
