Wort filtration method and its influencing factors

1. Wort filtration method
In beer production, wort filtration methods can be divided into four categories
(1) Static pressure filtration in filter tank.
(2) Filter tank positive pressure filtration method.
(3) Filter tank suction negative pressure filtration method.
(4) Filter press filtration method.
Most breweries in China use static pressure method to filter wort. It uses the static pressure generated by the height of mash column as the driving force to filter wort.
The filtration of wort by filter tank method is carried out through screening effect, filter layer effect and deep filtration effect. The filtration rate of wort is affected by many factors, such as filter resistance, filter permeability, filter thickness, wort viscosity and filter area. When the filtration area is fixed, the filtration rate of wort can be expressed as follows:
2、Influencing factors
The influence of various factors on wort filtration should be considered, and the negative effect of adverse factors on filtration should be reduced as far as possible. Factors affecting filtration can be considered from both process and equipment (see table 3-32)
