After liquefaction by amylase, the viscosity of mash should be significantly reduced, the molecular chain of starch should be shortened to some extent, and a certain amount of monosaccharides and disaccharides should be produced. Therefore, the quality inspection of gelatinization should be based on achieving or basically achieving these effects. In actual production, gelatinized mash is generally not analyzed, but can be judged from the appearance.
2.When the gelatinizing mash was heated to 90 ~ 95 ℃, a 100 ~ 200ml beaker was used for sampling. The mash with good gelatinization and liquefaction can be quickly clarified within a few minutes after sampling. The upper layer is watery clear liquid, not white and sticky. It feels watery with fingers and does not feel particularly greasy. It tastes slightly sweet, and the iodine reaction is reddish brown or purplish red.

In order to take timely measures for the mash with poor gelatinization and liquefaction, it is better to check it once when the mash temperature is 85 ~ 90 ℃.
