What is wilting and how to operate it?
In the process of wheat production, the operation mode of inhibiting the respiration of green malt at the later stage of germination, making the root buds shrink and the leaf buds stop growing is called withering operation.
In order to carry out wilting operation, stacking wilting can be used for floor germination, that is, stacking the green malt layer 30 ~ 40cm thick at the late stage of germination to promote CO2 accumulation and inhibit the respiration of green malt to achieve the purpose of wilting; for box germination, reducing the times of ventilation and mixing, gradually reducing the temperature of wheat layer to 13 ~ 15 ℃ or lower, ventilation and mixing 1 ~ 2 times a day, and controlling the air temperature at 10 ~ 12 ℃, The relative humidity can be ignored, and the dissolution of wheat grain is still continuing.
In the dehydration stage of green malt drying, there is also withering operation, but the time is only a few hours, especially at 40 ~ 70 ℃, which makes the wheat grain content continue to decompose until the water content is reduced to the enzyme can not function, or the temperature rises to inhibit the enzyme activity.
