What is the difference between the Glycol chilling system with only GWT and with both GWT & CWT?
The CWT is "Cold Water Tank", the GWT just mean "Glycol Water Tank", some customers called it "Ice Water Tank".
The CWT need cooling by the glycol water in the GWT, so if you prefer the simplified cooling system, you can only use the GWT.
As we know, when cooling the wort, the glycol water will go inside of the Heat exchanger for cooling wort. If there are any problems of the Heat exchanger, the glycol water will mixed with wort and pollute it. But if with CWT, the cold water will goes inside of the heat exchanger and cooling wort instead of glycol water. It is ok if the heat exchanger has any problems, since the cold water is no glycol included, it is clean.
By the way, it also will help to saves a little energy if with CWT, but for the smaller beer equipments, it is not obvious. The CWT is popular for using in commercial beer brewery systems, which also will expand your budget.
